Fabiano Amarone stands out for its intense colour with garnet highlights. The warm and elegant taste with very complex olfactory notes alternating sensations of red fruits. Intense and elegant in the mouth with balanced tannins and good acidity.


Viticulture

The vineyards surround the villages of San Pietro in Cariano and Negrar at an altitude of 190-370m above sea level. Soils are red and compacted, with presence of clay, marl and chalk. The vines are trellised using the Pergola Veronese method on stone walled terraces.


Vinification

After a careful manual harvest the grapes are dried and after around 4 months the grapes are gently pressed and destemmed, fermentation then takes place in stainless steel tanks at a controlled temperature of around 14ºC for 50 days, after 30 days of maceration on the skins. The wine is then aged for 30 months in Slovenian oak barrels and then for a further 3 months in bottle before going to the market.


Recommendation

Ideal with braised meats, game and mature cheeses. It can also be enjoyed at the end of a meal.
