Walt Riesling displays a charming pale straw colour. On the nose, this wine shows an impressive richness together with aromas of ripe apricots and juicy peaches. On the palate WALT RIESLING opens with intense flavours of ripe peaches and red apples. Dry, but still showing fullness and richness on the mid-palate WALT RIESLING finishes with a refreshing, juicy and enticing grip.
Viticulture
The grapes for WALT RIESLING grow on privileged vineyards on the eastern edge of Rheinhessen, mostly along the Rhein River. Hillsides facing east and south provide the most favourable microclimate for growing Riesling. Chalk and clay soils offer both excellent nutrition to the vines as well as sufficient water capacity. Gentle uphill winds during the summer avoid extreme heat spikes and allow for even ripening conditions. Moderate pruning during the winter months are the basis for reduced yields and high quality and ripeness of the grapes. The canopy is established by hand to ensure upright shoots and a foliage wall that ensures photosynthesis, aeration and evaporation adjusted to current climate change growing conditions. Defoliation mechanically and by hand. Soil cultivation is also adjusted to climate change growing conditions, including varying cover crops to increase biodiversity and humus build-up. Depending on water supply, the cover crops may have to be ploughed up during excessive heat periods to reduce water uptake from the cover crops and evaporation. It is important to note the WALT RIESLING is dry farmed. No irrigation, natural water supply only and hence a smaller CO2 footprint. Harvest is being determined predominantly by flavour of the grape as well as ripeness levels of seeds and stems. Must weight is only relevant to ensure that the alcohol level in WALT RIESLING remains in check. The grapes are harvested mechanically with a pre-selection by hand. After pressing, the marc is returned to the vineyards as natural fertiliser.
Vinification
Harvest day time is determined carefully to ensure, that the grapes arrive at the pressing house at low temperatures. Extended skin contact allows to extract precious aroma components from the skins. “Controlled idleness” is the cellar concept for WALT RIESLING. Temperature-controlled fermentation in stainless steel tanks at temperatures between 16°C and 18°C ensure a moderate fermentation while developing the beautifully floral aromas of WALT RIESLING. After fermentation the tanks are topped and left on the lees until just before bottling.
Recommendation
WALT RIESLING is great as drink or aperitif. However, it is also a charming companion to a wide range of different food. Cheese platters, Pizza, spicy Indian cuisine, hearty pork chops with rosemary potatoes as well as mussels, grilled fish or Lobster Thermidor will enjoy the company of WALT RIESLING.
