2020 Vini Fabiano Amarone della Valpolicella Classico DOCG

Amarone is a wine of antique lineage. It has a limited production with grapes coming from the classic zone of Valpolicella. The grapes are hand picked, pressed and vinified according to the traditional method.
TASTING NOTES: Fabiano Amarone stands out for its intense color with garnet highlights; the warm and elegant taste with very complex olfactory notes alternating sensations of red fruits.
FOOD PAIRING: It's ideal with braised meat, game and mature cheeses. It can also be enjoyed at the end of the meal.


Viticulture

Vinification

Fabiano's Amarone della Valpolicella Classico DOCG uses the traditional appassimento method, where grapes are dried for about 100 days to concentrate their flavors. The dried grapes are then pressed, fermented, and undergo a long aging process in oak casks for at least 30 months before a final bottle aging period. This results in a rich, full-bodied red wine with complex notes of dried fruit, spice, and mocha.


Recommendation

brasied and roasted meats. Short ribs or venison stew.
