Viticulture

3 weeks in concrete vats with regulated temperature.
Destemming only on Syrah.
Pumping over.
Shedding.
Pigeage on Syrah.

Aged for 12 months. 2/3 were in barrels with no new wood and 1/3 was in tank.

Grenache: Grown on Pied Redon - rolled pebbles on the surface with red clay and sandy base.
Syrah: Grown on Croix de Bois - red clay and rolled pebbles.

Manual harvest with rigorous sorting on the plot.
