Sustainable viticulture with the main focus being to grow the best quality fruit that will permit high quality wine production in the cellar. Canopies are managed to reduce the threat of fungal disease and yields are contained at approximately 3 tonnes an acre. All grapes are hand-harvested.
Grapes are destemmed, crushed and then allowed an extended period of cold maceration prior to fermentation. The wine is fermented till dry in stainless steel tanks and then allowed a further period of cold maceration before being pressed off the skins and then transferred to barrels. The wine is aged for approximately 11 months in barrels (predominantly French oak) before bottling.
