The base for this Vermouth is Riesling from the Urziger Würzgarten, which has a rich foul feel, spicy acid tingle and lingering finish. Kabinett is the lightest and most delicate style of Riesling in Germany, produced from the earliest harvested grapes. The Urziger Würzgarten vineyard served as part of the initial inspiration for the botanical used, grown in the shadows of the vines. Each botanical has an ideal harvest time in the year, and they are then extracted or dried to preserve their flavours.
Vinification
A collaboration between Ernst Loosen (The Winemaker), Philippe C./Grandbois (the Barman) and Tanja Grandbois (The Chef). With a shared ethos of natural extraction, using the wines natural sweetness, low ABV drinking and the use of locally grown botanicals testing began. 11 botanicals were selected, extracted in spirit and then blended with a sweet Riesling Kabinett wine. The Vermouth then comes together in a 1000ltr oak Fuder cask. No sugar is added.
Recommendation
Although drinking the Vermouth pure is delightful, this product was made to mix in classic and modern cocktails. From a lightly Vermouth Highball with soda or Spritz with a little Skt, all the way to the rich Martini or Negroni cocktail
