Vinification

gently whole cluster pressed our night cooled and hand harvested fruit from the AJT Vineyard. Once blended we fermented and matured our Sauvignon Blanc in a combination of new and second fill French oak barrels, and stainless steel . 6 Months in 30% New, 30% second fill French Oak Puncheons, 40% in stainless steel
