Why the name BOCO - Boco [bo-co] (determiner) it's from an Old West Sussex dialect meaning ‘lots of’/‘much.’ Derived from French, ‘beaucoup’. An irridescent pale, white peach in colour, clear with ultra fine bubbles and a hint of bronzing from the Pinot Noir. The nose offers ripe pear, stone fruit and fresh citrus, with a palate of peaches, ripe pears a hint of raspberry and a long, clean citrus and green apple finish.


Vinification

We wanted to make the best possible Charmat method sparkling wine we could to showcase part of what makes English wine so good great fruit flavours and great, crisp, acidity. We don’t see the Charmat method as a cheap alternative but rather a production method that emphasises different qualities in the wine it produces. We wanted to ensure that Boco was the best example of this style of wine. In line with this Boco is a vintage product – we wanted to be able to make the best wine we could for each year. What makes Boco appealing to our customers is its unique flavour profile. We offer a sparkling wine made in England that combines a popular fruity profile with fresh acidity and great body. We take nine weeks to complete secondary fermentation and use enzymes to help with the breakdown of the yeast. We did this to increase the body and mouthfeel as opposed to affecting the flavour. We whole bunch press the Chardonnay to pick up some of the more delicate flavours and destem the Pinot Noir to give a bit of a fruit kick. Fined using isinglass and gelatine.


Recommendation

Fabulous with most dishes but especially good with shellfish, charcuterie, canapes and pizza. Also complex enough to hold its own as an aperitif
