Luminous golden hue. Enticing aromas of ripe apricot, candied pineapple, quince, acacia honey, orange blossom, and a touch of saffron. On the palate, a vibrant acidity balances the luscious sweetness, revealing flavours of honeyed stone fruit, marmalade and a lingering floral note. Medium-bodied with a harmonious and persistent finish.
Viticulture
Deep soils of alluvial origin with decomposed, fine gravel with a sandy texture, as well as rocks in different stages of decomposition are present. Red clay and abundant quartz gravel can also be found on the surface. The organic content is low and soils are of low vigour and medium depth. The gradients in the vineyard are varied. The climate is moderated by early morning mists and colder nights due to its close proximity to the ocean. During the summer months the temperatures fluctuate between 9 - 30º, the latter being the peak maximum temperature in the afternoon. This astounding difference makes the area ideal for producing Syrah and Viognier. the winds are predominantly south-southwesterly and generally start to blow around sunset, helping to cool down the vines during the night and accumulate sugars and fruit characters in the grapes.
Vinification
Whole berries are pressed together, and the juice is clarified for 24 hours at 15 ºC by natural cold decantation. Alcoholic fermentation takes place in stainless steel tanks for 15 - 20 days at a temperature of 10 - 13 ºC. Fermentation lees are worked in the tank (sur lie). It spends 2 months in the bottle prior to market release
Recommendation
The perfect balance between sugar and acidity makes this wine ideal to enjoy with a great variety of desserts like Creme Brulee, chocolate mousse, cake or a fresh fruit salad.
