2023 Philip Shaw The Dreamer Viognier

Our Viognier keeps us dreaming, it’s a constant reminder to question convention. By trusting our instincts and trying new things we’re always discovering new potential with our vines and our wines.

An immediate apricot note, quickly followed by peach and honeydew. Crisp with a twist of lime and ginger accents. It is a light body, fresh, and bright wine that delights with its vibrancy and juicy fruitiness. To dream at best served it well chilled.


Viticulture

Harvested early for high acidity and lower alcohol. The vintage 2023 experienced a delayed start, with a cool and wet spring and consistently warmer weather during the end of summer. Once again, we had to face a hailstorm which affected some of our vineyards. A lot of effort has then been put into managing the crop and dealing with a mild wet Autumn to deliver ripe and healthy grapes in the winery


Vinification

The grapes are harvested early for high acidity and lower alcohol. Coarse settling at ambient temperatures overnight. Fermentation occurs in stainless steel tanks, on light solids with indigenous yeasts at 14-16Cº to enhance its aromatic potential and maintain freshness and balance acidity. Fermentation is arrested with cold temperatures, to leave the right amount of residual sugar (approx 7g/l), which aid in balancing acidity.

Enjoy with fresh, crisp salad dishes, grilled chicken and white fish.
