Viticulture
Grapes are grown on two of the most classic Riesling sites in Rheinhessen, Nierstein "Roter Hang" and Oppenheim, Rheinhessen. The terroir is red sandstone that pronounces the mineral character of Riesling and chalky clay soil from Oppenheim provides the fruits. Sustainable agronomic techniques to minimize the use of pesticides, provide healthy grapes and increase the biological activity of the soil.
Vinification
Gentle pressing, temperature controlled fermentation in stainless steel at around 16ºC, ageing on the lees
Recommendation
A great aperitif, but will match with all kinds of seafood, prepared in different ways. Also a great match to veal and salad, but please no vinegarette dressing!
