Viticulture

The Terroir is very stony and mixed with red clay. The vineyards benefit from the high altitudes, cold winters with abundant rainfall, followed by the cool South Easterly Sea breezes in summer. All these elements ensure ripening occurs slowly, resulting in wines of character, defined by excellent purity, complexity and elegance.


Vinification

The grapes were harvested by hand at optimal ripeness and sorted in the cellar to ensure only the best fruit was used for fermentation. A portion of the blend was fermented as whole berries. The wine fermented naturally and aged in barrel (300L) for 12 months


Recommendation

Pinot Noir is easy to please when it comes to pairing with food. It is light enough for salmon or chicken, but complex enough to complement richer red or game meats. Try it alongside game birds such as quail, turkey, and duck; with a fillet of salmon; or equally with pork, veal, lamb or venison.
