2023 Casas del Bosque Gran Reserva Chardonnay

Casablanca Valley

Pale yellow with green hues. The nose is expressive and complex; there are notes of white peach and citric fruit such as tangerine and lime . An outstanding floral component in notes of chamomile flower. The bouquet is complemented by sweeter notes from wood ageing such as spice and vanilla, which playfully hides behind the varietal expression.


Viticulture

Located just 18 kms away from the Pacific Ocean, in the Las Dichas side of Casablanca Valley, Casas del Bosque (CdB) is a family owned vineyard founded in 1993 by the Cuneo family. Thanks to the coastal micro climate of Las Dichas, the winery specializes in cool climate varieties such as Sauvignon Blanc and Pinot Noir, planted on a single estate of roughly 260 hectares. The main assets of the vineyard are its soils (compromised by different types of sand and loams over a granite substrate), as well as the coastal influence brough by oceanic breezes.


Vinification

After the harvest, the grapes were destemmed and crushed to a pneumatic press. The resulting juices were then left to cold settle for a night and the following day racked clean to stainless steel tanks, inoculated with selected yeasts and fermented at temperatures between 15 and 18ºC%/ . After that, a 10% of the young wine was transferred to third use - French oak barrels. Only 5% of the blend went through malolactic fermentation, carried out with a co-inoculation with lactic bacteria. The rest was left on its lees before the final blending. After clarification, cold stabilization and fining bottling the first bottling was carried out.


Recommendation

Ideally served at 6–8ºC/ 43-46ºF with crustaceans, shellfish and poultry. Herbs and spices such as nutmeg, sage and tarragon. This also goes well with Grilled courgette, mushrooms and creamy cheeses like époisses or burrata.
