Viticulture
The vineyards are located between 300-600m above sea level. With a cool climate and controlled production to obtain low yields that allow the grapes to have great aromatic potential.
Although Rioja is a small region, it has very diverse soils with balanced structure. The main composition is of silt, clay and sand. With a low level of nutritional elements, organic matter and little water availability during the summer - this all provides ideal conditions for excellent production and quality of the vines.
Vinification
Short maceration followed by a delicate pressing at low pressure, to obtain a clean and aromatic must. Next, a static racking is carried out with pectolytic enzymes. It is then fermented with selected yeasts at a controlled temperature between 15-18º C.
Recommendation
