Staddle Stone is derived from the Old English word ‘stathol’, meaning foundation or support and in medieval times these mushroom-shaped stones were used to support granaries, haystacks and beehives to improve air circulation. A series of medieval staddle stones demarcates the boundary of our chardonnay vineyard at Mousehall. Classic Chardonnay flavours with lime citrus and integrated oak. A cool-climate style characterised by refreshing linear acidity and mouth-filling fruit textures
Viticulture
The grapes for the Staddle Stone Chardonnay were hand-harvested between the 11th and the 15th of October 2022.

Vinification
Whole grape clusters were gently pressed, and the juice naturally settled, before fermentation and aging in 2nd fill 228-litre Burgundian oak barrels supplied by the Damy, Francois Freres and Rousseau cooperages and previous used for the Jordan Estate ‘Nine Yards’ Chardonnay. The wine was matured “sur lie” for 12 months, with regular barrel-rolling to accentuate the rich, leesy character. A small proportion of tank-fermented wine was blended in to enhance the fresh,citrus flavours.
