Viticulture

Grapes are grown in Corcelette, Morgon, from 45 year old vines with planting density of 10,000 plants/ha and a yield of 40 hl/ha. The 2ha vineyards are planted facing south at an altitude of 320m on weathered and deep granite

Vinification

Hand picked grapes that are sorted in the vineyard and in the cellar on a vibrating table. Semi-carbonic maceration for about 15 days in whole clusters. Control of temperatures below 28°C, with one very light pump over per day. Softly pressed and fermented with indigenous yeasts. 100% malolactic fermentation. Aged in oak foudres for 12 months.
