Viticulture

Grapes are grown in Bel Air à Saint Jean d’Ardières, from 7 year old+ vines with planting density of 9000 plants/ha and a yield of 50 hl/ha. The 1ha vineyard is planted facing south-east at an altitude of 250m on clay-limestone soils.

Vinification

Hand picked, then softly pressed fermented with indigenous yeasts for 2 months at 12°C. 100% malolactic fermentation. Maturation in stainless steel tanks 12 months.

Recommendation

Delicious with fish or cheese dishes. To be enjoyed within 3/4 years.
