2022 Corryton Burge South Australian Chardonnay

A lively, rich, round and creamy South Australian Chardonnay. Pale to yellow straw. Aromatic white nectarine, with hints of peach and pear. Palate provides generous fresh stone fruit and honey dew melon with a hint of creamy short bread richness all brought together with moderate acidity to provide balance.

Viticulture

2022 saw a cooler than average growing season that led to extended ripening conditions and retention of natural acidity. As a result patience was required to wait for optimum harvest dates ensuring full flavour development and acid balance was reached Patience was rewarded with outstanding flavours and varietal definition with exceptional quality across all white varietals.

Vinification

14-day fermentation in stainless steel, with a small portion in barrel, slow cool fermentation to preserve aromatics & left on lees for 9 months to develop richness and texture on the palate. Matured in oak stainless steel for a total of 9 months.

Pair with baked brie and walnuts or baked scallops.
