Viticulture

Fruit comes from vineyards in the Franschhoek region, planted on the South, South-East facing slopes, 350 - 400m above sea level, vines on average 15 years old.

Vinification

Grapes handpicked from three blocks of Chardonnay on the Chamonix Estate; whole bunch pressed; juice settled in stainless steel tanks for a day; fermented and matured in French oak for 12 months, 15% new oak.
