Deep ruby core with alluring garnet highlights. A captivating interplay of red fruits (strawberries, raspberries, ripe plums) with a touch of intrigue from earthy notes (wet earth, mushrooms) and delicate floral hints (fresh roses). A hint of the uniquely Chilean "murtilla" berry adds a layer of local character. Medium-bodied with vibrant acidity that frames the burst of ripe red fruit flavours. Soft, well-integrated tannins provide a gentle structure. The finish lingers with a touch of earth and floral character, leaving a lasting impression.

Nestled on the cool coast of the Colchagua Valley, Paredones Vineyard stands as a unique and pioneering estate. This property boasts minimal intervention, allowing the raw beauty of the Chilean coastline to take center stage. Blessed with a maritime influence, Paredones flourishes with grape varieties like Sauvignon Blanc, Sauvignon Gris, Pinot Noir, and Syrah. These grapes thrive in the cool climate, resulting in wines that express a singular elegance and vibrant fruit character. This vineyard has been at the forefront of this emerging region, crafting exceptional cool-climate wines that are both captivating and delicious.


Viticulture

Just 6 kilometres from the Pacific Ocean's embrace, our vineyards bask in cooling maritime influence. Planted on gently rolling hills, the soils are a fascinating composition. Deep and well-draining, they're primarily composed of decomposed granite rock rich in quartz gravel. This unique blend interacts beautifully with clay deposits, fostering optimal drainage and vine health. The cool influence continues with January's average high temperatures remaining below 23°C (73°F), creating ideal conditions for slow, even ripening.


Vinification

Our winemaking process begins with a meticulous hand-selection of grape clusters, ensuring only the finest fruit reaches the winery. To gently extract vibrant flavors and aromas, the grapes undergo a cold maceration for 6 days at a cool 7°C (45°F). Next, alcoholic fermentation takes place in temperature-controlled stainless steel tanks. The grapes transform into wine over 18 days at a moderate temperature range of 21-23°C (70-73°F). Finally, the tanks are drained, and the remaining pressings are incorporated before the completion of malolactic fermentation. This meticulous approach results in wines that are both expressive and beautifully balanced. For six months, 70% is aged in third and fourth-fill oak barrels. The remaining 30% rest in stainless steel tanks. A minimum of four months in the bottle before release.


Recommendation

This wine pairs beautifully with grilled salmon, its vibrant acidity and earthy notes make it a wonderful companion for a variety of dishes. Such as roasted duck, earthy mushroom risotto, or a selection of aged cheeses. Serve between 14 and 15°C (57-59°F). Drink now or cellar for up to 8 years.
