2021 Rutherford Hill, AJT Cabernet Sauvignon

Deep crimson with alluring notes of blackberry and marionberry with traces of dark chocolate, roasted oak, cedar and chestnuts. In the mouth there are rich opulent blackberry flavours with a subtle hint of raspberry, which leads into the layers of roasted oak and cedar. Long smooth velvety yet spicy finish.

Viticulture

100% Estate fruit. 2021 was a relatively challenging year for Cabernet Sauvignon. Pockets of the vineyard had some inconsistent growth and cluster ripeness early to mid-season. However, as we had an early start to fall harvest was relatively late allowing for some great flavors and complexities to develop. This wine is a debut of new Estate Cabernet clones: 35, 412 and 30 - adding more profile character

Vinification

21 days on skins with twice daily pump overs. Once pressed off skins, the wine moved to barrel and gracefully aged in our extensive cave system for 14 months. Aged 20 Months in 100% French oak (40% is New)

Recommendation

Delicious with steak, burgers, bison or lamb - robust meat dishes, but will also stand up well to vegetarian fare, mushroom dishes, aubergine.
