2021 Domaine Bader-Mimeur Bourgogne Chardonnay "Dessous les Mues"

This wine is from a vineyard plot called "Dessous les Mues", located in the commune of Chassagne-Montrachet. Clear golden yellow colour. A distinguished nose combining white fruit, mineral and vegetal notes and almonds. Round and full on the palate, with racy aromas invigorated by a lovely freshness. Discreet oak, long finish, a quality Burgundy.


Viticulture

Planted in Chassagne-Montrachet area in argil and chalk soils. Sustainable farming with no herbicides. Leaf stripping and simple Guyot pruning. Reasoned fight, partial grassing with mechanical working of the soil. The vines are 10-15 years old and planted with a density of 10,000 plants/ha, with a yield of 40hl/ha.


Vinification

Hand-picked grapes only, in little boxes of up to 30 kg with a very short transport time. The whole bunches are pressed in a pneumatic press. The grape juice is then cold-settled before filling oak barrels by gravity within 24 hours. Alcoholic and malolactic fermentation takes place entirely in oak barrels, naturally using indigenous yeasts. Aged in French oak barrels for 12 months, no new barrels with regular stirring of the lees.


Recommendation

Serve at 13°C with the following dishes: As an aperitif with prawns or a plate of oysters. Salmon steak en papillote, Bouchot mussels meunière, Burgundy snails, Bouquet of prawns, Asparagus platter, Scallops in cream sauce, Morel omelette, Soft-boiled egg on a bed of lamb's lettuce. Carpaccio of fresh salmon with herbs, Alsatian sauerkraut or fish sauerkraut. Toast with fresh goat's cheese.
