2021 Domain Bader-Mimeur Saint-Aubin 1er Cru "En Remilly" Blanc

Côte de Beaune

Golden yellow colour with brilliant highlights. Superb nose of flowers and white fruit, with hints of cream and vanilla. Beautifully structured and elegant on the palate, with a hint of oak to support the wine. Serve with fish or poultry in sauce.


Viticulture

Planted on the heights of the Montrachet hill in argil and chalk soils. Sustainable farming with no herbicides. Leaf stripping and simple Guyot pruning. Partial grassing with mechanical working of the soil. The vines are 35-60 years old and planted with a density of 10,000 plants/ha, with a yield of 15hl/ha.


Vinification

Hand-picked grapes only, in little boxes of up to 30 kg with a very short transport time. The whole bunches are pressed in a pneumatic press. The grape juice is then cold-settled before filling oak barrels by gravity within 24 hours. Alcoholic and malolactic fermentation takes place entirely in oak barrels, naturally using indigenous yeasts. Aged in French oak barrels for 10 months using 20% new oak and 4 months in stainless steel tanks with regular stirring of the lees.
