Viticulture
Planted in the Domaine du Château de Chassagne-Montrachet vineyard in argil and chalk soils. Leaf stripping and simple Guyot pruning. Reasoned fight, partial grassing with mechanical working of the soil. The vines are 35 years old and planted with a density of 10,000 plants/ha, with a yield of 38hl/ha.
Vinification
Hand-picked grapes only, in little boxes of up to 30 kg with a very short transport time. The whole bunches are pressed in a pneumatic press. The grape juice is then cold-settled before filling oak barrels by gravity within 24 hours. Alcoholic and malolactic fermentation takes place entirely in oak barrels, naturally using indigenous yeasts. Aged in French oak barrels for 10 months using 20% new oak and 4 months in inox vats with regular stirring of the lees.
