Wine of a deep lemon colour, exquisite aromas, scents reminiscent of citrus, stone fruit and oatmeal. Well-structured, mineral flavours of lime and toasted almonds on the palate.

Viticulture

Fruit from the Franschhoek region, on hectare planted in 2008 on the south facing slopes in the warmer, centre area of the Estate, 400m above sea level.

Vinification

Grapes handpicked from a single block of Chardonnay on the Chamonix Estate; whole bunch pressed, juice settled in stainless steel tanks for a day; 80% fermented and matured in French oak for 12 months; 45% new oak; 35% second fill; and 20% fermented and matured in concrete eggs for 12 months; kept on the lees for 90 days and stirred once a week.
