Colchagua Valley

Straw yellow colour with greenish tints, clean and brilliant. Aromas of yellow lemon, green pineapple, passion fruit and white orange blossom flowers. In the mouth it is fresh, light, with well-marked acidity, vegetable, citrus and herbaceous flavours. Its end it is slightly saline and floral.

Paredones, a unique pioneer vineyard property on the Cool Coast of the Colchagua Valley. It's a distinct place, natural and with very little exploitation, where the beauty of the Chilean coastline can be seen in its full splendour. It is ideal for grape varieties like Sauvignon Blanc, Sauvignon Gris, Pinot noir and Syrah. Wines from this property express unique fruit characters, very fresh and elegant. The Paredones vineyards have been a pioneer in this new growing area for producing high quality, cold climate wines.


Viticulture

Paredones property, Cool Coast, Colchagua Valley, Chile. Our vineyards are planted just 6 km from the Pacific Ocean, drawing a straight line on a map. Planted on rolling hills of granite soil with a percentage of clay, the soils are deep and exhibit good drainage. These soils evolved from granite rocks with a high percentage of quartz (in the form of gravel), which interact with clays and quartz rocks in decomposition. The average maximum temperatures for the month of January does not exceed 23 °C.


Vinification

Grapes are chilled in a cold room to 3°C, after which the grape clusters are manually selected and whole clusters are pressed. The juice is clarified and fermented under temperature control for 24 days. 100% stainless steel tanks 3 to 4 months, while working the fermentation lees in stainless steel tanks. 1 month in bottle prior to market release


Recommendation

Serve with sea bass ceviche. Serve at 7 to 9°C. Drink now or cellar for up to 4 years.
