2021 Bon Courage Estate Blend Cabernet Shiraz

Nose captures the fruitiness of the grapes with tons of tobacco, walnuts, blackcurrant and red berries. Soft tannins and a smooth textured finish. The nose follows through to the palate showing hints of spice.


Vinification

Shiraz fermentation took place for 8-10 days on the skins. After the grapes were cold soaked for 2 days, yeast was added. Cabernet Sauvignon juice was separated from the skins and left to ferment dry in stainless steel tanks for 3 days. The
wine was then oak matured in 2nd and 3rd fill French Oak barrels for 18 months.


Recommendation

Pair with hearty roasts, steak, oxtail and poultry dishes
