Pinot Noir / Spätburgunder – one of the finest red wine grapes. Very demanding in microclimate and viticulture. Ruby red colour, beautiful play of colours, cherry and raspberry-like flavours and aromas, a hint of oak from the barrique-barrel-ageing, well balanced, soft acidity and ripe finish.
Viticulture
Loam and clay. Vineyards on top of the hills. Heavy soil with excellent absorptive capacity for rain water. Hilly vineyard area, mostly loam soil. Sustainable farming and grape growing. Exclusive use of organic fertilizers, no irrigation. Reduced pruning, defoilage and green harvest. Very limited and strictly monitored use of fertilizers and chemicals.
Vinification
Separation of the free-run for increased colour intensity and fruit extraction, Skin maceration and extended maceration time for approx. 2 weeks, no filtration, ageing in oak.
Recommendation
Suits all dark meat, cheeses, crackers. As aperitif or with main courses.
