Viticulture

Reduced pruning, defoilage and green harvest. Very limited and strictly monitored use of fertilizers and chemicals. Yield of less than 3.500 litres per hectare. Heavy clay soil which contributes to the deep and complex character of Bergkirche wines. Steep hillsides along the Rhein River.

Vinification

Gentle pressing, natural sedimentation, temperature controlled fermentation at 12°C in stainless steel, one filtration only, ageing in stainless steel.

Recommendation

For any occasion particularly spicy food, fusion cuisine spicy seafood. Recommended servicing temperature of 8°C - 10°C.
