2020 Domaine Bader-Mimeur Puligny Montrachet 1er Cru "Champ Gain" Blanc

Champ Gain is one of the highest climates on the Puligny hillside, located just behind Mont-Rachet. The pure gold colour of this wine catches the light in the glass. Vetiver and stream moss combine in an evanescent fragrance. The gentle sweetness of its aging releases a mineral and saline flavour.


Viticulture

Planted on the heights of Puligny, close to Saint-Aubin in argil and chalk soils. Sustainable farming with no herbicides. Leaf stripping and simple Guyot pruning. Partial grassing with mechanical working of the soil. The vines are 30 years old and planted with a density of 10,000 plants/ha, with a yield of 40hl/ha.


Vinification

Hand-picked grapes only, in little boxes of up to 30 kg with a very short transport time. The whole bunches are pressed in a pneumatic press. The grape juice is then cold-settled before filling oak barrels by gravity within 24 hours. Alcoholic and malolactic fermentation takes place entirely in oak barrels, naturally using indigenous yeasts. Aged in French oak barrels for 10 months using 20% new oak and 4 months in stainless steel tanks with regular stirring of the lees.

Serve at 13°C with the following dishes: Duck foie gras on toast, Hake bellevue, Sea bream in a salt crust, Roast sea bass back, Salmon steak en papillote, Prawns a la plancha, Lobster salad with baby vegetables, Pressed salmon with caviar, Grilled lobster, Sea fish fillet in cream sauce, Trout meunière, Bresse chicken in cream sauce, Asparagus
