2019 twill Cellars Willamette Valley Chardonnay

Immediate, linear notes of lime leaf, flint, ginger, jasmine and graham. With air this fleshes out with secondary notes of nectarine, peach and the almighty feijoa (the South American pineapple guava fruit). The feel no matter the fruit is mineral. On the palate, flavours of tangerine, peach, cream and lightly toasted grain are noted.

Vinification

There was no yeast added into the fermentation. The wine went through a light fining with casein and bentonite. The wine was aged for 19 months prior to bottling in 20% New French and Austrian Foudre.
