2019 Philip Shaw The Architect Chardonnay

Philip Shaw Wines

Orange

The Architect inspires an original. It helps define proportion, structure, character and style on a way that relates to people and place.

The Architect is pale straw yellow with a slight green tinge. The nose is complex and alluring with honeyed fruit, vibrant citrus and a touch of toast. It has a fresh palate with layers of stone fruit, savoury characteristics and creamy nuances. Bright citrus acidity gives the wine clarity and drive. Viticulture

The Chardonnay was sourced from younger vines (1995) in our Koomooloo vineyard and was harvested in the cool of the night.

Vinification

The grapes are harvested in the cool of night. Oxidative handling of juice and coarse settling at ambient temperatures. We use indigenous yeast for fermentation with 65% older French oak. The process of battonage builds mouthfell and complexity and we allow partial natural malolactic fermentation with maturation on lees.

Recommendation

Delicious served with spit roasted chicken with char-grilled asapargus or equally at home with roasted wild salmon.
