2019 Domaine d'Ardhuy Ladoix Rouge

Ladoix Rouge has a crystal clear garnet red color. Its nose reveals notes of raspberries and red fruits. On the palate it is greedy, crunchy and slightly woody.


Viticulture

Old massal selections rub shoulders with younger vines, partly planted in clonal selections. The average age of the vines is around 35 years. Clay-limestone soil, complex of slope formations: products of alteration of the substrate, various scree and colluvial silt on chailles (limestone pebbles). These cherts, coming from the Buisson alluvial cone, provide these relatively fertile soils with good drainage, favourable to the earliness and ripening of the grapes. Located at the foot of the Butte de Corton, these vines are around 250 m above sea level. The slope is low, the exposure South for Les Chagnots and South-East for Les Chaillots and Les Vris.


Vinification

The grapes are crushed and destemmed. Fermentation is started quickly (no pre-fermentation maceration). The extraction of aromas is done by pigeages only. The vatting lasts about 12-14 days. The Ladoix are aged in barrels, 15-20% of which are new. Aging lasts about a year; the wine is bottled without fining, with very light filtration.


Recommendation

Pair with rabbit with a mustard cream or grilled lamb skewers
