A medium bodied dry red, with hints of raspberry and cherries on the nose, the fruit and the tannin balance well on the palate, a long and satisfying finish.
Viticulture
Sustainable farming and grape growing. Exclusive use of organic fertilizers, no irrigation, defoliage by hand for reduced use of pesticides and healthier grapes, cover plants as natural fertilizer, to increase biological activity of the soil and to reduce soil compression, hand selected harvest with maximum grape temperatures at harvest below 15°C.
Vinification
A soft pressing of the grapes, then fermentation in stainless steel at 25ºC, followed by maturation in oak casks.
Recommendation
Pair with hearty game dishes or roasts.
