Vinification

The grapes are hand-harvested when fully ripe and pressed immediately by pneumatic press.The juice then go through static settling. Only clear juices are vinified for 70% in stainless steel tanks and 30% in 1 to 3 years old barrels.


Recommendation

Best served at a temperature of 12°, with shelfish, grilled fish, white meats and goat's cheeses.
