Our approach to The Chase Semillon in the winery is all about quality; hand picking, early free-run juice cuts at the press, double racking and fining of juice, and a cool fermentation. After ferment, the component wines are racked off gross lees, and then spend another four months in tank, cloudy. Further fining is minimal in style, prior to bottling in June. Relative to our more contemporary styles of Hunter Semillon, we really want to see The Chase Semillon deliver that beautifully pure fruit expression and linear acidity that are the hallmarks of great, age worthy Hunter Semillon.
