Full yeasty rich flavours with hints of raspberry. Silky richness filled with red berries and balanced with subtle mineral undertones.


Vinification

The base wine was kept on its lees for 8 months initially during the first fermentation. The second fermentation is then allowed to take place in the bottle, thereby extending maturation on the lees for 96 months. After disgorgement and dosage the final product is left on the cork and then released in October 2021.


Recommendation

To be enjoyed on its own or with seafood based canapés. Truly versatile and can be served with oysters, salmon, tuna, prosciutto, sushi, Asian style dishes, rich cheeses and red berry dessertd.
