2012 Bon Courage Jacques Bruére Cap Classique Blancs de Blancs

This Blancs de Blancs has hints of fresh lime and citrus, complimented by a subtle yeastiness. It shows a great finesse on the finish with a crisp, rich and creamy complexity.


Vinification

The base wine was kept on the lees for 8 months initially during the first fermentation. 10% of the Chardonnay was barrel fermented. The 'magic of the bubbles' begins during the second fermentation that occurs in the bottle thereby extending maturation on the lees for 96 months. After disgorgement (removal of the yeast lees) and dosage (adding base wine and sugar) the final product is left on the cork for around 9 months, and then released.


Recommendation

Best served as an aperitif of with oysters and the ideal partner to seafood. Also a great match with sushi or lime flavoured Thai dishes. Made to enjoy now or within the next 3 -5 years.
